Cornbread, in an iron skillet, a country pleasure.
Do you remember Jo Northrop’s Simple Country Pleasures, at Country Living Magazine? The feature was an extra special delight of the publication. When Jo passed away, the column ended. Recently, Country Living included Simple Country Pleasures, again.
Like Country Living Magazine’s Simple Country Pleasures, Country Pleasures blog is all about the pleasures of simple country living. Sue, who lives in the Ozarks, is a fabulous cook and crafter. She also writes a wonderful blog.
Last weekend, Sue’s church held a Fall Fest. One of the events, included in the fest, was an auction of baked goods, with proceeds going to feed the hungry.
Blueberry Bread Pudding was one of the desserts Sue prepared. The recipe sounded so good, I decided to give it a try.

Blueberry Bread Pudding
1 loaf blueberry crumble bread
1 c. frozen or fresh blueberries
4 eggs
12 oz. can evaporated milk
1/2 c. butter
2 tsp. vanilla
2 tsp. cinnamon
Preheat oven to 350. Melt butter in microwave for one min. In a large bowl combine milk and butter, mix well. Tear bread into bite size pieces and add to milk mixture. Add remaining ingredients and blend well, adding more milk if needed. Mixture should be moist but not too soggy. Transfer into a 9x13 baking pan and bake for 30-40 min. Drizzle cream cheese or vanilla frosting on top once cooled.
I used about 2 tablespoons of prepared Duncan Hines cream cheese frosting, heated in the microwave for about 5 seconds. There is plenty of frosting left over; a very good excuse for making a little batch of cupcakes.

last week i saw a new cast iron skillet, but thought i'd never use it...that and the seasoning process which takes patience. maybe later in the winter!
I can make a meal just off the cornbread and yes it has to be in an iron skillet.
The Pudding looks amazing girl. I love that bread for toast. One of my late clients got me started on that. We had it each morning with coffee when I walked in her door.
Hope things are going good and the water problem is fixed.

First off, Pat, I didn't know Jo Northrop passed away and it breaks my heart. She wrote like a friend. All of her adventures antiquing and going to sales out in the country...I remember when she lost her dear husband, it was so sad. Well, at least I know now.
On a good note, I LOVE blueberry anything, so I am taking this recipe and I will be sure to try it as soon as I can. And I am going to visit your friend's blog. Thanks so much!

Hi Pat! Bread pudding is Mr. Precious' favorite. This sounds and looks so good! I have a big bowl like your cream and blue pottery in the background of your photo. I bought it at a roadside shop and they were selling this huge bowl for $5 and told me it had held head cheese. I don't know what that is, but it sounds awful, doesn't it?

Yum-yum! Oh, that cornbread harks back to my youth. We had cornbread pretty much every night for supper. I use to crumble it up in milk at night for my snack. Have you heard of doing this? It was just what we did out in the country. I shall check out the link. Thanks!

OMGoodness! I made cornbread in the iron skillet a few weeks ago... took pics with intentions of blogging but never got around to it. (all that rain we had put me in a funk!)
There's just nothing like it tho!! I added honey and Agave to mine and it was heaven. He had it with homemade vegi beef soup.

The very words 'Country PLeasures' give me a warm feeling. There are some great links here which I shall follow. I love both the US and UK versions of Country Living magazine, I've bought the UK one right from its very first issue and still have a subscription. Great post Pat- you always have such inspiring photos on your blog - especially of food!
